Low Sugar Matcha Tea Cookies
This recipe makes light, crumbly cookies which pair well with tea, coffee or the drink of your choice. Approximately 3-4 grams of sugar per cookie.
Ingredients
- 1 ¼ cups all purpose flour
- 2 tablespoon matcha powder
- ½ teaspoon cinnamon
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter room temperature
- 2 tablespoons sugar
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- ½ large beaten egg, or 1 egg yolk
Heat oven – Preheat the oven to 350°F. Grease cookie sheet.
Sift dry ingredients – In a large mixing bowl, whisk together flour, matcha powder, baking soda, baking powder, and kosher salt and set aside.
Mix wet ingredients – In a separate large mixing bowl cream together butter, sugar, and honey until smooth. Add the vanilla and egg and mix until combined.
Combine dry and wet ingredients and mix until the ingredients are just combined. Do not over-mix the dough.
Prepare cookie dough balls -Use a small ice cream scoop, cookie dough scoop, or tablespoon to scoop the dough and form 2 tablespoon cookie dough balls. Place the dough balls onto the prepared cookie sheets. Leave 1-2 inches between each cookie to allow the dough to spread.
Bake for 8 to 10 minutes. The edges will turn slightly golden. Let the cookies rest for 5 minutes on the cookie sheet.
